kcalIngredients
4 medium-sized green tomatoes
1 cup all-purpose flour
1/2 cup milk
2 eggs
1 cup cornmeal or breadcrumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
Oil, for frying
- For the Dipping Sauce:
1 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon hot sauce
Salt and pepper to taste
Directions
- Slice the green tomatoes into about 1/4-inch thick rounds.
- In a shallow bowl, combine the flour with a pinch of salt and pepper. In another shallow bowl, whisk together the milk and eggs. In a third bowl, mix together the cornmeal or breadcrumbs, salt, pepper, and paprika.n both sides and serve hot.
- One at a time, dredge each tomato slice in the flour, shaking off the excess. Then dip in the egg mixture, ensuring both sides are well coated. Finally, dredge them in the breadcrumb mixture, pressing the crumbs onto both sides. Place the coated tomato slices on a baking sheet.
- In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until shimmering.
- Carefully place a few tomato slices into the skillet. Don’t overcrowd the pan. Fry for 2-3 minutes on each side or until golden brown.
- Using a slotted spoon, transfer the fried tomatoes to a plate lined with paper towels to drain. Repeat with the remaining tomato slices, adding more oil to the pan if necessary.
- To make the dipping sauce, combine the mayonnaise, lemon juice, and hot sauce in a small bowl. Season with salt and pepper to taste.
- Serve the fried green tomatoes warm, with the dipping sauce on the side.
Helpful Tips
- Choose the Right Tomatoes: Green tomatoes aren’t just unripe red tomatoes. They’re actually a different variety. Look for firm tomatoes with a bright green color.
- Slice Thickness: Be consistent with your slicing. If the slices are too thick, the outside will brown before the inside has cooked. Too thin, and the tomato can become mushy.
- Dry Tomatoes: Pat your tomato slices dry before dredging them. This will help the flour stick better.
- Breading: Make sure the tomatoes are fully coated in each step of the breading process. This will give you a more uniform and crispier crust.
- Rest Before Frying: Allow breaded tomatoes to rest for a few minutes before frying. This helps the breading to adhere better to the tomatoes.
- Oil Temperature: Make sure your oil is hot enough before adding the tomatoes. The oil should sizzle when a drop of water or a small piece of bread is dropped into it.
- Don’t Overcrowd the Pan: This can lower the oil temperature and make the tomatoes soak up more oil, becoming greasy.
- Drain Well: Use a paper towel-lined plate to drain excess oil after frying. This will help keep your fried green tomatoes crispy.
- Serving: Fried green tomatoes are best served fresh and hot. However, if you need to keep them warm for a short period, you can place them on a wire rack in a low-temperature oven.
- Experiment with Flavors: Feel free to experiment with different spices in your breading or different flavors in your dipping sauce to suit your personal taste.
